Crab Pasta Sauce
- Water
- 1/2 t salt
- 1/3 pound dry pasta
- 1/8 C thinly sliced onion
- 1/8 t nutmeg
- 2 t lemon juice
- 1/3 - 1/2 C flake imitation crab meat
- (options are cooked: scallops, shrimp, white flake crab meat)
- 1/3 C low-fat sour cream
- 2 T cornstarch
- 1/2 - 2/3 C sweet white wine (Chablis or Sauvignon Blanc)
- dash pepper
- 2 T Parmesan or Romano cheese
- In 2 qt. sauce pan, fill to 2/3 full with water and add salt. Bring to boil and add pasta, stirring occasionally to prevent sticking.
- In 1 qt. microwave safe bowl, place onions and cook on high for 1-2 minutes until transparent. In small bowl mix together remaining ingredients - except crab and cheese - until no lumps are present. Cook on high for 3-4 minutes until slightly thickened. Add meat and cook for 1 - 2 minutes until heated through.
- Drain pasta, place in pasta bowls. Ladle sauce over pasta, and sprinkle with cheese. Serve.
