Shrimp With Pasta And Sun Dried Tomatoes
- 1/4 cup olive oil
- 1 1/2 pounds large raw shrimp, purchased shelled and deveined
- 3 green onions, chopped
- 1 or 2 garlic cloves, minced
- 1/2 cup sum dried tomatoes, sliced thin
- 1/2 cup dry white wine
- 1 cup whipping cream (I substitute soy creamer because Brian is lactose intolerant, I think that whipping
- cream creates a richer taste and thickens better if no one is lactose intolerant.)
- 6 oz of fresh pea pods/snow peas with strings removed-this is roughly one box of pea pods from Whole Foods.
- I steam the pea pods separately so that they are al dente and retain a bright green color.
- I then add them to the sauce in the last few minutes before serving.)
- 1T dried or 2T fresh basil
- 8 oz of fresh or dried pasta (you won't need the entire batch of the fresh pasta recipe I provided unless
- you double this recipe but the extra pasta can just be tossed with olive oil and parmesan ch
