Crab And Artichoke With Parmesean Cheese
- t/2 pound crab meat shredded (any variety), drained
- t small jar marinated artichokes sliced and drained
- t/4 cup roasted red peppers minced and drained
- t/2 cup grated or shredded parmesan cheese (reserve a little for topping)
- t tablespoons mayonnaise
- talt and pepper
- **additional items for topping: 2-3# fresh skinless salmon fillet and 2 tablespoons olive oil
- Blend all ingredients in a medium bowl. Place mixture in oven proof baking dish and top with additional cheese. Bake 20 minutes. Serve immediately.
- **If used as a topping for salmon, rinse and pat dry salmon side. Lightly rub olive oil on salmon. Season salmon with salt and pepper. Mound crab mixture evenly on top of fish. Place salmon in shallow baking dish and bake 30-35 minutes uncovered, or based on thickness (Cook fish 10 minutes per inch, add 5-7 minutes per topping)
