Healthier Banana Pudding
- 1/2 c. sugar
- 1/3 c. flour
- dash of salt (optional)
- egg substitute equal to 3 eggs
- 2 c. skim milk or 2%
- 1 tsp. vanilla
- 1/4 to 1/2 tsp. nutmeg
- 5 to 6 medium very ripe bananas
- 3 doz. vanilla wafers
- 12 to 15 marshmallows
- Combine sugar, flour and salt.
- Blend together with egg substitute in top of a double boiler.
- Cook, uncovered, over boiling water, stirring constantly until thickened.
- Reduce heat and cook for 4 to 5 minutes, continuing to stir.
- Remove from heat; add vanilla and nutmeg.
- Spread a small amount of custard on bottom of a 1 1/2-quart bowl or casserole.
- Add a layer of wafers, sliced bananas, custard, wafers, sliced bananas and ending with custard to make 3 layers.
- Place marshmallows on top and bake at 450u0b0 for 3 to 4 minutes until marshmallows are slightly brown. Serve warm or room temperature.
- Makes 8 servings.
