Healthier Banana Pudding

  1. Combine sugar, flour and salt.
  2. Blend together with egg substitute in top of a double boiler.
  3. Cook, uncovered, over boiling water, stirring constantly until thickened.
  4. Reduce heat and cook for 4 to 5 minutes, continuing to stir.
  5. Remove from heat; add vanilla and nutmeg.
  6. Spread a small amount of custard on bottom of a 1 1/2-quart bowl or casserole.
  7. Add a layer of wafers, sliced bananas, custard, wafers, sliced bananas and ending with custard to make 3 layers.
  8. Place marshmallows on top and bake at 450u0b0 for 3 to 4 minutes until marshmallows are slightly brown. Serve warm or room temperature.
  9. Makes 8 servings.
