Eva'S Irish Soda Bread
- 4 c. flour
- 2 Tbsp. sugar
- 1 tsp. salt
- 2 c. buttermilk
- 2 Tbsp. butter, melted
- 2 eggs, beaten
- 1 tsp. caraway seed (optional)
- 1 c. raisins (optional)
- In a large bowl, combine flour, sugar, salt, soda, baking powder and optional caraway seed and raisins.
- Mix well.
- In a medium bowl, beat eggs. Add buttermilk and butter.
- Combine well. Pour egg mixture into dry ingredients, stirring with wooden spoon just until dry ingredients are moistened. Turn out dough onto lightly floured board. Knead lightly until smooth, about 1 minute. Shape dough into a ball.
- Place on cookie sheet.
- With hands, flatten into a 7-inch circle. With a sharp knife, cutting 1/4-inch deep, mark top into quarters.
- Bake 35 to 45 minutes or until top is golden brown and loaf sounds hollow when rapped with knuckle. Remove loaf to wire rack.
- Brush top with butter and cool completely.
