Shirley'S Minestrone
- 1 lb. beef (shank, short ribs, soup bone)
- 2 1/2 qt. cold water
- 2 Tbsp salt
- 1 cup dried white or red beans
- 1 Tbsp olive oil
- 2 cloves garlic, minced (or 1/4 tsp garlic salt)
- 1/2 cup onion, finely chopped
- 1/2 cup parsley, minced
- 1/8 tsp black pepper
- 1 cup green beans, cut into 1" pieces
- 2 medium potatoes, diced
- 2/3 cup peas
- 2 cups finely shredded cabbage
- 1 cup carrots, diced
- 3/4 cup celery, diced
- 1 cup peeled, chopped tomato
- 3/4 cup shell macaroni
- grated Parmesan cheese
- Place meat in deep cooker. Add water, salt, and dried beans. Cover and bring to a boil. Skim. Cover and simmer several hours. Heat oil in skillet. Saute garlic, onions, and parsley. Chop meat. Remove fat. Add remaining ingredients, except macaroni and cheese. Simmer 30 minutes. Add macaroni. Serve with cheese.
