Mushroom And Leek Quiche

  1. Heat butter and oil; saute leeks over high heat until soft. Stir in flour.
  2. Remove from heat and add mushrooms.
  3. Mix the eggs and add the half and half; mix.
  4. Blend in the leek mixture, cheese and salt and pepper.
  5. Pour the mixture into a prebaked pastry shell, filling to 1/8-inch from top.
  6. Sprinkle top with the oregano and parsley.
  7. Bake for 40 minutes.
  8. Let stand for 15 minutes before serving.
