Curried Cauliflower Apple Soup
- 1 16-ounce package frozen cauliflower florets
- 1 small onion, chopped fine
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1/2 teaspoon curry powder, or more to taste
- 2 only 4-ounce cups apple sauce
- 3 cups vegetable broth
- Plain low fat yogurt or fat free half and half
- Chopped chives for garnish
- Cook cauliflower as directed on package in a large microwaveable bowl.
- In a smaller bowl, heat olive oil, curry powder, onion and garlic on high until softened, about 3 minutes. Watch that it doesn't burn
- Add apple sauce, 3 cups of broth and onion mixture to cauliflower.
- Microwave on high about 6 minutes, stirring halfway.
- Let cool and puree with immersion blender or processor.
- Adjust seasoning and add more broth if necessary.
- Swirl with yogurt and/or half and half.
- Sprinkle with chopped chives if desired.
- Can be served hot or cold.
