Candy Buckeyes
- 3 lbs. powdered sugar
- 2 lbs peanut butter
- 1 lb. Butter (softened)
- 2 12 oz. Packages semi sweet chocolate chips
- 1/2 bar paraffin wax
- Combine peanut butter, butter and powdered sugar in large bowl.
- Roll into balls the size of buckeyes (about the size of a quarter)Place on un-greased cookie sheet and place in refrigerator for at least one hour - overnight is better.
- Melt chocolate chips and praffin in a double boiler. No double broiler? Just bring a pot of water to a boil and place a smaller pot into it with the chocolate chips and paraffin.
- Insert a toothpick in the peanut butter balls and dip in the chocolate
- mixture leaving a small circle uncovered/
- Remove the toothpick and cover up the hole left by the toothpick.
- Place buckeyes on wax paper and refrigerate. can last in the freezer for at least a few months.
