Minestrone
- 1 pound Italian Sausage - slice to 1/4" pieces & brown
- 2 Onions - diced
- 2 cloves Garlic - minced
- 28oz can Whole Peeled Tomatoes & Liquid
- 3 T Tomato Paste
- 7 cups Chicken Broth
- 1 cup dry Red Wine
- 2 T dried Basil
- 2 T dried Oregano
- 2 med Zucchini - thinly sliced
- 1/2 cup Italian Parsley - chopped
- 5 oz Thin Spaghetti - break into 2" pieces
- 15oz can Garbanzo or White Beans - drained
- Salt & Pepper - to taste
- 1. Brown the Sausage, then add the onions and garlic and sweat.
- 2. Add next 6 ingredients & cook uncovered over medium heat for 30 minutes.
- 3. Add zucchini, parsley & spaghetti & cook until pasta is soft, approx. 10 minutes.
- 4. Add beans and cook 10 more minutes to warm them.
- 5. Finish with salt, pepper and grated parmesan cheese (optional).
