Hamburger Summer Sausage
- 2 lb. hamburger meat
- 1/4 tsp. garlic powder
- 1/4 tsp. mustard seed
- 3 Tbsp. Morton's Tender Quick salt
- 1 c. water
- 1/4 tsp. onion powder
- 2 Tbsp. liquid smoke
- 1/2 tsp. peppercorns (optional)
- 1/2 tsp. lemon pepper (optional)
- 2/3 tsp. red pepper (optional)
- Combine all ingredients, mixing well.
- Shape into a roll 2 inches in diameter.
- Wrap in foil, shiny side in.
- Refrigerate for 24 hours or overnight.
- Next day poke holes in the bottom of the foil with a toothpick.
- Pour 1/2 inch of water in the bottom of a roaster pan.
- Place about 3 lids (jar) in the bottom of this pan. Put the meat on the lids with the side with the holes on the bottom.
- Bake for 90 minutes at 325u0b0.
