Healthy Macaroni Casserole
- 1 lb. whole wheat elbow macaroni
- 1 lb. low-fat ground turkey
- 1 c. red pepper, diced
- 1 c. yellow pepper, diced
- 1 c. onion, chopped
- 2 (15 oz.) cans tomato sauce
- 1/4 c. lemon juice
- 2 cloves garlic, minced
- 1/2 tsp. basil
- 1/2 tsp. oregano
- Prepare macaroni as directed on box; set aside.
- Saute onion, peppers and garlic in a deep frypan.
- Add ground turkey and brown thoroughly.
- Drain off any fat and add tomato sauce and spices. Return to heat for 5 minutes and mix well.
- In a casserole dish (greased) combine macaroni and turkey tomato sauce with 1/4 cup lemon juice.
- Cover with grated Parmesan cheese.
- Bake 45 minutes at 375u0b0.
- Serves 6.
