Lemon Scone

  2. 1Preheat the oven to 425*F.
  3. 2Lightly oil a baking sheet.
  4. 3Place the butter pieces and lemon peel in a medium bowl or in food processor.
  5. 4Sift the flour, sugar, baking powder, baking soda, and salt over the butter.
  6. 5By hand or with the food processor, mix the butter into the flour until evenly distributed.
  7. 6Add the thyme and mix well.
  8. 7Add the buttermilk and stir or pulse briefly.
  9. 8The dough will be soft and a little sticky.
  10. 9On a lightly floured surface, pat the dough into a 9-inch circle that is about 1/2 inch thick.
  11. 10Slice it into six pie-shaped wedges.
  12. 11Place the wedges on the prepared baking sheet and brush the tops with a little buttermilk.
  13. 12Bake for 20 minutes, until the biscuits are firm and nice and golden brown.
  14. 13Serve immediately.
