Marinated Mushrooms
- 3 lb. fresh mushrooms
- 1/3 c. red wine vinegar
- 1/3 c. salad oil
- 1 small onion, sliced in rings
- 1 tsp. salt
- 1 tsp. prepared mustard
- 1 tsp. brown sugar
- 1 1/3 c. red wine vinegar
- 1 1/3 c. salad oil
- 3 small onions, sliced in rings
- 3 tsp. dried parsley
- 3 tsp. prepared mustard
- 3 tsp. brown sugar
- Place mushrooms, vinegar, oil, onion, seasonings and sugar in large pot.
- Boil for 3 minutes; drain in colander.
- Combine red wine, vinegar, salad oil, onions, salt, parsley, mustard and brown sugar and pour over mushrooms in a large bowl.
- Marinate at room temperature until cool.
- Place, covered, in refrigerator for at least 24 hours.
- Will keep as long as mushrooms last.
