Shrimp Scampi

  1. cook the linguine in a pot of boiling water with salt and a bit of olive oil. 1/2 lbs of pasta is the mix i like, but you may prefer more starch. use 1 lbs at the max.
  2. meanwhile, in a heavy-bottomed pan (12 inch) melt butter and 2.5 Tbl of olive oil. add the garlic and saute for 1 minute. add shrimp, 1.5 tsp of salt, and 1/4 tsp pepper. cook until shrimp are just pink--about 5 minuters (don't overcook!). remove from heat.
  3. add parsley, zest of the lemon, thinly sliced half rounds of the lemon, lemon juice, and the red pepper flakes to the shrimp. toss till well mixed.
  4. drain pasta well, then add it to the shrimp mixture. toss well to mix and serve.
