Bodacious Wheat Bread

  1. Dissolve the yeast in the lukewarm water. Mix everything else and add the flour last. Add enough to make it not gooey, then knead in the rest of the flour on the counter. The amount you use will depend on the humidity, so just keep adding until it is elastic and not too dry nor wet.
  2. I usually divide it in half to knead it.
  3. Grease a large bowl lightly and let the dough rise until double -- about 1.5 hours.
  4. Punch it down and fold/knead it a bit and place it into 4 bread pans to rise again.
  5. Bake for 30-40 minutes in a 350 degree oven.
  6. (You can use substitute some white flour for a lighter bread, but I prefer the whole wheat for its nutty taste with the molasses and spices.)
