Filled Croissants (Brunch)
- Ingredients (vary as you like):
- 4 Trader Joes mini croissants (proofed overnight)
- fresh, chopped baby spinach
- marinaded artichoke hearts, chopped
- pre-cooked bacon, chopped
- 2 extra large eggs, scrambled & par-cooked
- lowfat cream cheese (neuchatel)
- shredded mexican-blend cheese
- Preheat oven to 350 degrees use olive oil to grease your pan (I use a 'pyrex'/glass pie dish), arrange proofed croissants in the dish add a large tablespoon of scrambled eggs to the top of each croissant (yes, it's going to smoosh down) add smaller spoons of spinach, artichokes, and bacon atop the eggs add a dollop of cream cheese to each sprinkle a bit of shredded cheese atop season with salt, pepper, or my favorite - Vignalta Put into preheated oven and cook for 20 minutes. Let sit for 15 minutes before serving. You can get creative and try other ingredients. I have to say, I was mulling over the cream cheese or brie decision in front of the open fridg for a while...
