Golden Squash Cake
- 1 1/2 c. all-purpose flour
- 3/4 tsp. baking powder
- 3/4 tsp. soda
- 1/4 tsp. salt
- 1/4 tsp. ground cinnamon
- 2 tsp. fresh squeezed orange juice
- 2 Tbsp. whipped cream cheese
- 1 tsp. vanilla
- 1 c. grated yellow squash
- 8 pitted dates, chopped
- 1/4 c. confectioners sugar
- 1/2 c. sour cream
- 2 eggs
- 1/4 c. sugar
- Preheat oven to 350u0b0.
- Onto sheet of wax paper, sift flour, baking powder, soda, salt and cinnamon; set aside.
- Beat eggs and sugar until combined.
- Add sour cream, orange peel and vanilla. Add dry ingredients.
- Mix well.
- Stir in squash and dates.
- Spray Bundt pan before adding batter.
- Bake 25 to 30 minutes.
- Invert cake onto wire rack.
- Let cool 15 to 20 minutes.
- In small mixing bowl, combine confectioners sugar and cream cheese.
- Add juice. Mix well.
- Pour over cooled cake.
