Potato Date-Nut Cake
- 3/4 C. shortening
- 2 C. sugar
- 3 eggs, well beaten
- 1 C. mashed potatoes (with a little salt)
- 2/3 C. buttermilk
- 2 C. flour
- 1 1/2 tsp. soda
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 3/4 tsp. ground cloves
- 1 C. chopped pecans
- 1 C. dates (chopped and firmed packed)
- Cream shortening and sugar until light and fluffy. Add well beaten eggs and mashed potatoes stir until blended. Sift dry ingredients together and cover dates and nuts with a small amount of flour mixture. Add flour mixture to creamed mixture, alternately with buttermilk. When well blended stir in nutmeats and dates. Bake in greased and lightl floured 9x13-inch pan or small angel food cake pan in 300 degree oven for about 1 hour.
