Almond Flour Muffins
- 2 cup almond milk
- 2 T ground flaxseed
- 1/2 cup coconut oil
- 1/2 cup maple syrup
- 1 tsp vanilla extract
- 3 cups almond flour
- 2 cups whole wheat flour
- 3 tsp baking powder
- 1 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup chopped walnuts
- 1/2 cup organic raisins
- Preheat the oven to 350 degrees and lightly grease a nonstick 12-cup muffin tin.
- In a medium-size bowl, whisk together the almond milk and ground flaxseed. Allow to sit for 1 minute, then whisk in oil, syrup, and vanilla.
- In a separate large bowl, sift together flour, almond meal, baking powder, salt, and spices. Add the wet ingredients to the dry, mixing until just incorporated. Gently fold in the raisins and nuts until the large lumps are gone.
- Pour into the prepared muffin tin and bake for 20 to 22 minutes until a toothpick inserted into the center of a muffin comes out clean.
