Penne With Oven-Dried Tomatoes, Olives And Herbs

  1. Cook penne according to package directions.
  2. Meanwhile, slic the tomatoes into strips. Place in a pasta bowl, large enough to hold the penne. Add olives, capers, garlic, hot red pepper flakes, oregano and mint, and toss gently. Drizzle the oil over hte tomato mixture and sprinkle with salt to taste. Toss gently. When penne is cooked, transfer the penne (still dripping cooking water) to the bowl and toss gently to combine the ingredients.
