Penne With Oven-Dried Tomatoes, Olives And Herbs
- 1 1/2 cups Oven-Dried Tomatoes (cut tomatoes in half, lay on a cooking sheet, drizzle with olive oil, dry in 200 degree oven for 6-7 hours)
- 10 large black olives, pitted and chopped
- 2 teaspoons capers
- 1 garlic clove, minced
- 1/2 teaspoon dried hot red pepper flakes, or to taste
- 1 tablespoon minced fresh oregano leaves
- 1 tablespoon minced fresh mint leaves
- 1/3 cup olive oil
- salt
- 1 pound penne
- Cook penne according to package directions.
- Meanwhile, slic the tomatoes into strips. Place in a pasta bowl, large enough to hold the penne. Add olives, capers, garlic, hot red pepper flakes, oregano and mint, and toss gently. Drizzle the oil over hte tomato mixture and sprinkle with salt to taste. Toss gently. When penne is cooked, transfer the penne (still dripping cooking water) to the bowl and toss gently to combine the ingredients.
