Mami'S Lebkuchen
- 4.5 cups Rye flour
- 2 cups Light brown sugar
- 3/4 cup Honey
- 3 pieces Eggs
- 1 piece Egg for glaze
- 3.5 cups Ground nuts
- 1 teaspoon Baking soda
- 1 tablespoon Lemon zest
- 1 tablespoon Orange zest
- 1 teaspoon Allspice
- Mix all the dry ingredients in a bowl.
- Make a well in the center, add eggs and honey and mix with your hands.
- Cover, set aside for 12 hours (or refrigerate overnight)
- Roll out dough and cut with cookie cutters and preheat oven to 300 F
- Place on a cookie sheet, greased with coconut fat
- Brush with egg wash and bake until done (I like them slightly springy to touch), let cool and decorate with almonds and candied fruit.
- Optional icing: Beat 2 cups of powdered sugar with juice of one lemon and white of an egg. Place in bag, cut small hole in corner and squeeze the bag to decorate.
