Superbowl Of Chili
- 1 can black beans (approx.)15 oz do not drain
- 1 can fire roasted diced tomatoes do not drain
- 1 can corn do not drain
- 1 large onion diced
- 1/2 cup of your favorite prepared tomato based salsa (I prefer a "quemado-blackend"type
- 3 cups 1/2 inch diced, cooked chicken
- (about 1 pound)
- garnishes: chopped cilantro, grated cheese, chopped onion, sour cream,
- chips, chopped iceberg lettuce-whatever you like
- cooked rice (optional)
- Simmer together the beans. tomatoes, corn, onion & salsa about 20 minutes to thicken. This can sit until you're just about ready to leave.
- The last 5 minutes reheat & add the chicken, & adjust seasonings with salt, peppers, cumin, extra salsa.
- (note: if you cook it down too much or prefer a thinner version add chicken broth to thin)
- Wrap your pot in newspaper to keep it warm & you're ready to go!
- Serve in bowls over rice if desired.
- Garnish & enjoy.
