Berry Oatmeal Muffins

  1. Preheat your oven to 500u0b0F.
  2. Whisk flour, oatmeal, baking powder, salt, cardamon together in large bowl. Add berries to dry mix and coat. Set aside.
  3. In a small bowl, whisk the eggs and sugar till light, about 45 seconds.In a medium bowl, whisk together melted butter, oil, vanilla, and buttermilk. Add egg mixture and continue to whisk till well combined. Fold wet mixture into flour mixture with a spoon or spatula. Mix lightly and leave the batter slightly lumpy.
  4. Divide batter evenly among tins. Place muffins in the oven and immediately drop temperature to 400u0b0F. Bake for 15 to 20 minutes, or until muffins test done.
