Banana Bread

  1. As I have so many friends and relatives with nut allergies, I typically pass on the chopped nuts and go without.
  2. I suggest you don't bother measuring the banana mash, just use two and skip the mess and hassle. Mash up two bananas in a separate bowl. Then lightly beat two eggs in another separate bowl. Then begin measuring out your other ingredients into their bowls. Follow the steps in the order outlined, and the consistency of the final bread is always great.
  3. Scrape the batter into the pan and spread evenly. Bake until a toothpick inserted in the center comes out clean, roughly 50 minutes in my oven, yours may take longer. Let cool in the pan at least 10-15 minutes before cutting your first slice, otherwise it tends to fall apart and crumble.
  4. Also makes a great housewarming or welcome to the neighborhood gift if wrapped in waxpaper, tied with a ribbon.
