Spicy Whole Grain Penne With Black Beans And Green
- 8 oz (dry) whole grain penne
- 3 TBSP olive or canola oil
- 3 garlic cloves, peeled and minced
- 1 medium yellow onion, coarsely chopped
- 3 garlic cloves, peeled and minced
- 1 1/2 c. cooked black beans, rinsed if canned
- 6 to 8 ounces Italian sausage style meat substitute (such as Boca), cooked and sliced into half-rounds
- 3/4 c. c. tomato sauce
- 3/4 c. peeled, diced tomato
- 1 bunch (about 1 1/2 lb.) rainbow chard, washed and coarsely chopped
- 1/2 tsp red pepper flakes, or to taste
- 1/4 c. vegetable stock or pasta cooking water, if needed
- 1/2 c. grated cheese, such as Romano, Parmesan, or aged dry gouda, plus extra grated cheese for the table
- 1/4 c. pine nuts, toasted (optional)
- Cook pasta in boiling water according to package directions until nearly al dente.
- While pasta cooks, heat oil in a large skillet. Add onion, cook until wilted. Add garlic, cook 1 minute. Add black beans. "sausage", tomato sauce, diced tomato, chard, red pepper, and salt and pepper to taste. Cook until chard wilts.
- Stir cooked, drained penne into the chard mixture.Add vegetable stock or some reserved pasta cooking water if it seems dry. Cook on low heat 2 to 3 minutes, transfer to a warm bowl and stir in 1/2 c. grated cheese. Sprinkle with pine nuts. Serve with ample cheese on the side.
