Calamari Supremo
- 1# Calamari
- Wondra
- salt
- pepper
- vegetable oil
- 1/4-1/2 tsp Wasabi
- Honey
- 1/2 and 1/2 (an ounce or two)
- squeeze of lemon
- Sauce:
- Take small amount of Wasabi (1/4-1/2 tsp) and put in small bowl. Add honey and mix until the mixture is sweet and not bitter. Probably about 3-4x the amount of Wasabi. Stir this until smooth. Add a small amount of 1/2 and 1/2 at a time until the mixture is a light yellow color and the consistency of cream. Add a squirt of lemon.
- Calamari:
- Cut the calamari into rings about 1/4" wide. Heat the vegetable oil in a frying pan until hot. Dredge the calamari, a small amount at a time, in a pile of Wondra with some salt and pepper added. Toss immediately into the oil and fry for about 2-4 minutes. Remove and set aside and keep frying until calamari all done.
- Place the calamari on a plate and drizzle with a small amount of sauce. Enjoy!!
