Curried Cauliflower Stir-Fry
- 1 medium onion, chopped
- 1 clove garlic,chopped
- 1 pound firm tofu, diced
- 1 pound kale, tough stems removed, chopped
- 1 1/2 tablespoons mild curry powder
- 1/4 teaspoon cinnamon
- 1 - 1 1/2 cups water or no-salt vegetable stock
- 1 large head cauliflower, cut into pieces
- 1 large red bell pepper, chopped
- 1 teaspoon Bragg Liquid Aminos or low sodium soy sauce
- 1/4 cup fresh parsley
- Heat 2 tablespoons of water in a skillet and water saute the onion, garlic and tofu for three minutes or until onion is tender. Add the kale, spices and water and saute two more minutes. Add the cauliflower, red bell pepper and soy sauce and saute an additional 5 minutes or until cauliflower is tender. Add the fresh parsley and serve.
