Grain-Free Chocolate Vegan Pancakes

  1. In a medium-sized mixing bowl combine ground flax and 1/4 cup warm water. Stir then let sit for 2-3 minutes.
  2. In same bowl, add in all dry ingredients. Stir.
  3. Add in maple syrup and water (1/3 cup at a time). Stir. (Batter is thick.)
  4. Warm frying pan on medium heat.
  5. Grease pan with coconut oil and add approximately 1/4 cup of batter on pan. Pat down (with fork or spatula) batter to desired thickness. Cover pan and cook pancake for 3-4 minutes then flip and cook another 3-4 minutes.*
  6. Remove pancake and serve.
