Grain-Free Chocolate Vegan Pancakes
- 3 tablespoons Ground Flax
- 1/4 cup Warm Water
- 1/3 cup Cassava Flour
- 1/4 cup Cocoa Powder
- 1/4 cup Coconut Flour
- 1/2 teaspoon Baking Powder
- 1/4 teaspoon Pink Salt
- 2 tablespoons Maple Syup
- 1 cup Warm Water
- In a medium-sized mixing bowl combine ground flax and 1/4 cup warm water. Stir then let sit for 2-3 minutes.
- In same bowl, add in all dry ingredients. Stir.
- Add in maple syrup and water (1/3 cup at a time). Stir. (Batter is thick.)
- Warm frying pan on medium heat.
- Grease pan with coconut oil and add approximately 1/4 cup of batter on pan. Pat down (with fork or spatula) batter to desired thickness. Cover pan and cook pancake for 3-4 minutes then flip and cook another 3-4 minutes.*
- Remove pancake and serve.
