Grain-Free Low Carb Unsweetened Carrot Cake

  1. Mix together all the dry ingredients.
  2. Separately, beat the eggs until well aerated, slowly add the oil and fromage while still beating.
  3. Combine the two mixtures.
  4. Bake in lined muffin tins or a greased cake pan, ensuring the batter is no more than 2" thick.
  5. 180 celsius for 30-40 minutes or until firm, less for muffins.
