Grain-Free Low Carb Unsweetened Carrot Cake
- Dry Ingredients
- 350g Shredded Carrots
- 50g Oats
- 230g Ground Almonds
- 25g Chopped Walnuts
- 1 Shredded Apple
- 1 TBSP Ground Ginger
- 1 TBSP Cinnamon
- 1 TSP Ground Coriander
- 1 TSP Ground Cloves
- 1 Inch Vanilla Bean, ground--or 1 TSP Vanilla
- Wet Ingredients
- 5 Eggs
- 100g Melted Coconut Oil
- 100g Fromage Blanc, non fat
- Mix together all the dry ingredients.
- Separately, beat the eggs until well aerated, slowly add the oil and fromage while still beating.
- Combine the two mixtures.
- Bake in lined muffin tins or a greased cake pan, ensuring the batter is no more than 2" thick.
- 180 celsius for 30-40 minutes or until firm, less for muffins.
