Summer Tomato And Herb Pasta
- 3 TB olive oil
- 3-4 cloves of chopped garlic
- 6 large ripe tomatoes (very coursely chopped)
- 1 tsp sea salt (or more to taste)
- Freshly ground black pepper
- 1/4 cup chopped herbs (basil, oregano, parsley, marjoram)
- 1/4 tsp red pepper flakes
- 1/4 cup grated cheese (Parmesan or a mix of Italian cheeses)
- 8 oz. dry pasta
- Additional olive oil
- Additional cheese
- Combine the oil, garlic, salt, black pepper and red pepper. Add chopped tomatoes, herbs and cheese. Allow to stand at room temperature for at least 3 hours.
- Taste and add additional salt, pepper and cheese if desired.
- Boil pasta until al dente. Drain and toss hot pasta with tomato mixture.
- Pass additional cheese at the table.
