Mixed Fruit Soup
- 3 c. cranberry juice
- 1 c. apple juice
- 2 1/2 Tbsp. quick cooking tapioca
- 1/2 c. sugar
- 1 orange, sliced and seeded
- 1 lemon, sliced and seeded
- 2 (3-inch) cinnamon sticks
- 4 whole cloves
- 4 fresh apricots, pitted and sliced
- 4 fresh nectarines, pitted and sliced
- 4 fresh plums, pitted and sliced
- sour cream (optional)
- ground cinnamon (optional)
- Combine juice, pudding and sugar in a large saucepan.
- Bring to a boil. Simmer 5 minutes or until slightly thick.
- Add orange slices, lemon slices and spices.
- Simmer 10 minutes more, stirring occasionally. Discard citrus slices, cinnamon sticks and whole cloves.
- Add fresh fruit and simmer 10 minutes longer. Serve hot or cold. Garnish with sour cream and/or ground cinnamon.
