Creamy Herbed Goat Cheese With Chicken And Pasta

  1. It is important to assemble and prepare all ingredients in advance of beginning the cooking process; once you start, there's little time to stop. Everything should be within reach.
  2. Following the directions on the package, fill a pan with water in preparation for cooking the pasta. Turn the burner on high; while waiting for the water to begin boiling, start cooking the chicken as described below. When the water is ready for the pasta, add salt (if desired) to the water, add pasta, return to a boil and set a timer according to package directions.
  3. To cook the chicken, heat the olive oil in a large (12") skillet or wok over medium-high heat. Add chicken, sliced red onions, Italian seasoning and minced garlic; saute or stir-fry until the chicken is no longer pink in the center. 3-4 minutes.
  4. Add the frozen peas and sliced red or yellow pepper and saute or stir-fry another 4 minutes, or until pepper is crisp tender.
  5. (Your pasta may be done at this point; if so, remove the pan with the chicken and vegetables from the burner, while you drain the pasta. Allow the pasta to sit in the colander while completing preparation of the chicken.)
  6. Reduce heat to medium. Return skillet or wok to the burner. Stir in the chicken broth and goat cheese. Cook, stirring constantly, until cream cheese is melted.
  7. Place pasta in large bowl. Pour chicken mixture over pasta. Mix gently.
