A Sure Winner H.J.'S Vegetable Beef Soup
- 1 lb. stewing meat.. cut into bite size
- 1 T. oil
- 1 1/2 large onionsnhopped
- 2 large gloves of garlic.. m inced
- 1-(28 oz.) can of diced or whole tomatoes
- 1/4 can of Campbell's tomato juice
- 1 large carrotnhopped
- 3/4 head of cabbagenhredded
- 1/4 to 1/2 cup of pearl barley
- 2 carrotsn Chopped
- 1 small can of lima beans...rinsed
- 1 small can of corn...rinsed
- 1/2 tsp. dried basil
- 1 T. Italian Seasoning
- 3 large bay leaves
- Salt and pepper to your taste
- Water to fill almost the top of the pot.
- 4 oz. Wide noodle
- Put oil in the pot to brown the meat. Add the meat cut-up into bite size pieces..brown. Add onions and garlic. Saute a little.
- Add: whole tomatoes or diced - tomato juice and all the rest "Except" the noodles to the pot.
- Bring to a full boil and turn down heat to simmer all day.
- Stir often through out the day.
- 30 minutes before serving cook the noodles separate or add right to the pot. Hj
- Remove bay leaves. Taste for adjusting salt and pepper.
- Serve with bread and butter.
- Optional: can add little yellow squash and zucchini cubed at the last 30 minutes also.
- If you are in hurry or don't have all the vegetables use 1 to 2 cans of Veg-All in place of most of the vegetables; but the small can of limas and corn is a must along with the onions- cabbage and barley.
