Spicy Tofu Banh Mi
- 1/4 cup rice wine or apple cider vinegar
- 1-1 1/2 tsp red pepper flakes
- 2 tsp sugar or honey
- 1/4 cup shredded carrot
- 1/4 cup shredded daikon radish (usually found in Asian supermarkets -- if you can't find it, it tastes great with double the carrots, too!)
- 1 generous portion of French baguette or a hoagie roll, sliced in half lengthwise
- 1/2 cup Asian-flavored tofu, prepared however you'd like (I like it baked or stir-fried)
- 3-4 cherry tomatoes, sliced
- 2 strips thinly sliced cucumber, cut lengthwise
- 2-3 sprigs fresh cilantro
- 2-3 large lettuce leaves
- Mayonnaise, to taste
- Sriracha (rooster) sauce, to taste
- Soy sauce, to taste
- Combine the vinegar, sugar/honey and red pepper flakes in a small bowl. Add the carrots and daikon radish, then stir. Let sit for 15-30 minutes, stirring occasionally.
- For a toasted sandwich, preheat the oven to 350 degrees. Place the hoagie roll or baguette on baking sheet. Bake 5 minutes, then let cool for 2-3 minutes.
- Spread mayo on both sides of the bread. Mix soy sauce with mayo on one side, and Sriracha with mayo on the other side. Fill with tofu, cucumber and cilantro. Drain carrot and radish mixture, then spread on sandwich. Top with tomatoes and lettuce, and season with salt and pepper if desired. Press top half of bread on top and slice sandwich in half.
