The Best Greek Salad
- 1 cup tomato diced
- 1 cup cucumber diced
- 3/4 cup yellow pepper diced
- 1/2 cup marinated olives
- 1/2 cup marcona almonds
- 1/3 cup crumbled feta cheese
- 1/4 cup olive oil
- 1 tbps red wine vinegar
- 2 tps lime juice
- 1 tbs diced fresh basil, oregano, thyme and marjoram (optional but worth it)
- salt and pepper to taste
- 1. In a bowl, chop up and mix tomatoes, cucumber (with or without seeds), and yellow pepper into evenly sized cubes. Mix in a little salt to bring out the flavor of the veggies.
- 2. Mix in the olives and almonds
- 3. Crumble the feta cheese and mix
- 4. Dice up fresh herbs (i don't measure this part, just throw in what I think is best) and mix into bowl
- 5. Combine oil, vinegar, lime juice and salt and pepper and mix together.
- 6. Drizzle dressing over salad.
- 7. Cover bowl and toss it like there's no tomorrow.
- 8. Grab a fork and enjoy!
