Florentine Scalloped Potatoes(6 Servings)
- 1 (10 3/4 oz.) can condensed Cheddar cheese soup
- 1 (16 oz.) can tomatoes, drained and chopped
- 1 (10 oz.) pkg. frozen chopped spinach, thawed
- 1/2 c. sliced bacon
- 1 Tbsp. chopped parsley
- 1/2 tsp. lemon juice
- 1/2 tsp. marjoram
- 1 clove garlic, minced
- dash of pepper
- 2 c. shredded Swiss cheese
- 4 c. thinly sliced potatoes
- Preheat oven to 375u0b0.
- Butter a 2-quart casserole dish.
- In a mixing bowl, stir together all ingredients, except 1/2 cup of cheese and sliced potatoes.
- In the prepared casserole dish, layer sauce alternately with potatoes, beginning and ending with sauce. Cover.
- Bake 1 hour and 10 minutes.
- Uncover.
- Sprinkle with remaining cheese.
- Bake an additional 15 minutes.
- Makes a great side dish.
