Saucy Chicken With Artichokes And Mushrooms
- 4 chicken breast halves, skinned and boned
- 1/4 c. all-purpose flour
- 2 Tbsp. butter or margarine
- 1 (16 oz.) can artichoke hearts, drained and quartered
- 1 (4 oz.) can sliced mushrooms
- 1 c. whipping cream
- 1/2 tsp. cracked pepper
- 1 tsp. Dijon mustard
- 1/4 tsp. garlic powder
- 1/4 c. grated Parmesan cheese
- hot cooked noodles
- Cut chicken in bite size pieces.
- Place in plastic bag with flour and shake until chicken pieces are well coated.
- Melt butter in large skillet over medium heat.
- Add chicken and cook 5 minutes on each side until golden brown.
- Cover and cook 5 minutes.
- Drain drippings from pan.
- Add artichokes and next 5 ingredients.
- Cook, stirring constantly, until sauce is thickened (low heat).
- Add cheese and stir for 1 to 2 minutes.
- Serve over hot cooked noodles. Spinach noodles make a pretty dish.
