Gharki Dal (Red Lentils)
- 1 c. red lentils
- 1 Tbls. peeled + grated fresh ginger
- 1 tsp. ground turmeric
- 4 c. water
- 1 1/2 tsp. salt
- 1 Tbls. mustard oil or olive oil
- 1/2 tsp. panch phoron
- 1 dried red chile
- 4 lg. cloves garlic, sliced thin
- 1/4 c. fresh cilantro, chopped
- 1. Rinse + pick lentils. Add ginger, turmeric, and water. Bring to boil over high heat ... reduce to medium and boil, uncovered, until soft. approx. 25 min. Stir in salt and reduce to very low to keep warm.
- 2. Heat oil in med fry pan over high heat until it smokes ... remove from heat and let smoking stop. approx. 30 sec. Return pan to medium heat and add panch phoron and dried chile. When ingredients have turned several shades darker, approx. 1 min., add garlic and cook until light brown, approx. 1 min.
- 3. Remove from heat and pour all over lentils. Add cilantro and mix.
- 4. Ladle into bowls.
