Smokin' Chicken Wings
- WINGS:
- 3 lb chicken drummettes
- 1/4 C olive oil
- 5 Lg garlic cloves, minced
- 6 Tbsp smoked paprika
- 2 Tbsp dried oregano
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp ground allspice
- SAUCE:
- 1 C barbecue sauce
- 1/4 C red wine
- 3 Tbsp smoked paprika
- 1 Tbsp dried oregano
- 2 Tbsp ground cumin
- Combine drummettes, oil and garlic in large resealable plastic bag; massage bag to coat wings.
- Combine all remaining wing ingredients in small bowl. Pour into bag with chicken; massage bag to coat wings.
- Refrigerate at least 4 hours or up to 24 hours.
- Preheat oven to 425 deg F.
- Line large rimmed baking sheet with foil; top with wire rack. Spray rack with cooking spray. Remove chicken from marinade; discard remaining marinade. Place chicken on rack and bake 40 to 45 minutes, or until golden brown and no longer pink, turning once.
- Meanwhile, simmer all sauce ingredients in small saucepan over medium heat 3 to 4 minutes or until warm. Serve sauce with wings.
