Frank 'N Chili Manicotti Ole
- 10 manicotti shells
- 1 (7 1/2 oz.) can tomatoes
- 1 (7 1/2 oz.) can jalapenos
- 2 (15 oz.) cans chili with beans
- 10 frankfurters
- 6 oz. Monterey Jack cheese
- Cook manicotti in boiling salted water according to package until just tender.
- Drain; set aside.
- Shred 2/3 of cheese; set aside.
- Cut remaining cheese into 4-inch strips.
- Slit frankfurters lengthwise; insert strip of cheese.
- Place 1 cheese stuffed frank into each cooked manicotti.
- Combine chili, tomatoes and jalapenos; spoon about 2 cups of mixture into bottom of 13 x 9 x 2-inch baking dish.
- Arrange the 10 filled manicotti shells atop sauce in dish. Pour remaining chili mixture over.
- Cover; bake in 350u0b0 for 25 minutes.
- Uncover.
- Sprinkle shredded cheese on top.
- Bake 10 minutes more.
