Baked Ricotta Sandwiches With Buttered Garlic Tomato Sauce
- 1 1/2 cups Ricotta cheese
- 4 oz. cream cheese, cubed and softened
- 1/2 lb. (1 cup) ground mild Italian sausage
- 1 tsp. dried rosemary, chopped
- 1/4 cup sun-dried tomatoes, diced
- 12 slices Italian bread, sliced on the diagonal
- 1 Tbs. garlic salt
- 1/4 cup unsalted butter
- 6 slices mozzarella cheese
- Sauce:
- 6 oz. unsalted butter, melted
- 1/2 cup sour cream
- 2 cloves garlic, crushed and minced
- 1/4 cup canned diced tomatoes, strained
- 2 tsp. extra virgin olive oil
- 2 tsp. dried basil
- 1/2 tsp. oregano
- 1/2 tsp. salt
- Preheat oven at 425 degrees F. Grease cookie sheet or shallow baking pan with 2 teaspoons olive oil.
- Place ricotta, cream cheese and sausage in large mixing bowl. Sprinkle in rosemary and sun-dried tomatoes. Mix well with hands or fork. Mixture will be almost pink. Spoon onto pan in 2 tablespoon mounds or hand-form patties and place on greased pan, creating 6 patties.
- Drizzle remaining olive oil equally on each mound. Bake 20 minutes. Sausage patties should be browned. Place slices of cheese on each patty and replace in oven for 5 to 7 minutes until cheese is lightly melted. Keep warm until ready to serve.
- Mix sauce ingredients in small saucepan over medium heat for approx. 2 minutes. Stirring briskly with wire whisk or wooden spoon, drop heat to medium-low before any boiling can occur. Cover. Let sit on burner for 15 minutes, stirring occasionally. Sauce should start to thicken.
- Place Italian bread slices on to cookie sheet or shallow baking pan. Spread about a teaspoon of butter on top of the each bread slice. Sprinkle a dash of garlic salt on top of buttered bread. Place pan in oven for 5 to 8 minutes or until bread is toasted golden brown.
- Place slice of Italian toasted bread on plate. Place a cheese-topped sausage patty on top. Drizzle tablespoons of butter garlic sauce on top of patty and bread. Top with another piece of toasted bread. Continue with next plates. Serve warm.
