Valentine'S Day Butter Cookies
- 1 C butter
- 3/4 C sugar
- 2 egg yolks
- 1 t lemon peel
- 1/2 t vanilla
- 2 c flour
- 1 egg white, lightly beaten, if desired, to brush plain cookies before baking.
- Raspberry jam for tart cookies.
- Cookies:
- 1. Preheat oven to 350.
- 2. Cream butter and sugar.
- 3. Beat in egg yolks.
- 4. Stir in lemon peel and vanilla.
- 5. Mix in flour.
- 6. Roll out 1/8 inch thick and cut into desired shapes. This will be easier if the dough is chilled.
- 7. Bake 10 - 12 minutes.
- For tart cookies:
- Cut as many large hearts as you can. Cut a small heart window out of half of the large heart cookies before baking, to create a windowed heart outline. After the cookies cool, spread raspberry jam on the whole large heart cookies and top with the outline cookies (the large hearts with a heart-shaped window.) The small heart cut-outs can be served plain, spread with raspberry jam, or dipped in tempered chocolate.
