Valentine'S Day Butter Cookies

  1. Cookies:
  2. 1. Preheat oven to 350.
  3. 2. Cream butter and sugar.
  4. 3. Beat in egg yolks.
  5. 4. Stir in lemon peel and vanilla.
  6. 5. Mix in flour.
  7. 6. Roll out 1/8 inch thick and cut into desired shapes. This will be easier if the dough is chilled.
  8. 7. Bake 10 - 12 minutes.
  9. For tart cookies:
  10. Cut as many large hearts as you can. Cut a small heart window out of half of the large heart cookies before baking, to create a windowed heart outline. After the cookies cool, spread raspberry jam on the whole large heart cookies and top with the outline cookies (the large hearts with a heart-shaped window.) The small heart cut-outs can be served plain, spread with raspberry jam, or dipped in tempered chocolate.
