Lemon Ginger Sugar Cookies
- 1/4 cup unsalted butter
- 3/4 cup of sugar
- 1 large egg
- 1 1/3 cup AP flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground ginger
- 1 tablespoon grated lemon zest
- 1/2 teaspoon lemon extract
- 1/4 cup diced cyrstallized ginger
- 1/4 cup of florida cyrstals for sprinkling
- Preheat oven to 350
- Line two baking sheets with parchment.
- In bowl cream butter. Add sugar and beat on medium high until light and fluffy. About 5 minutes. Scrape down bowl. Add egg and lemon zest and extract.
- In medium bowl whisk together flour, gingers, baking soda, and salt.Mix until combined.
- Using teaspoon scoop or 2 teaspoons , drop cookie batter on baking sheets, 2" apart. Sprinkle with Florida cyrstals and bake 10- 12 minutes.
