Baked Macaroni With Chicken And Mushrooms
- 1 box penne rigatte pasta (16 oz/1 lb box)
- 1 cup mayonnaise
- 1 can mushroom soup
- 1 can evaporated milk
- 1 can mushrooms
- 1 block cream cheese, softened
- 1 red bell pepper, cut in small cubes, microwave 3 mins.
- 1 lb. chicken
- 1 onion, yellow
- 1 large white onion, small cubes
- Mozzarella cheese, shredded
- Salt
- Pepper
- 1. Boil chicken with quartered yellow onion, salt and pepper. When cooked, cool then shred. Set aside.
- 2. Microwave red bell pepper for 3 minutes. Set aside.
- 3. Cut white onion in small cubes. Set aside.
- 4. Cook penne rigatte pasta. Drain.a
- 5. Mix together mayonnaise, softened cream cheese, cream of mushroom soup, evaporated milk, shredded mushrooms, shredded chicken, white onion cubes, red bell pepper cubes. Put in pan. Top with shredded mozzarella cheese. Cover with foil.
- 6. Bake at 350-375 deg.
