Red Current, Yellow Tomato Salad With Lemon Thyme
- 3/4 cup red currents
- 1 pt.yellow cherry tomatoes
- 2 Tablespoons pink peppercorns
- 1 Tablespoons black sesame seeds
- 2 handfuls of green lettace leaves
- 5 sprigs lemon thyme
- 1 tsp. fresh ground sea salt
- 2 Tablespoons wild honey
- 2 Tablespoons evoo
- 2 Tablespoons fresh squeezed lime, lemon or orange juice
- Slice into halves 1 pint yellow cherry tomatoes and put in a small bowl with 2 Tablespoons EVOO and 1 tsp sea salt to marinate with leaves of fresh lemon thyme. Combine 2 T honey with 2 T squeezed citrus juice, black seame seeds and pink peppercorns. Add to tomatoes and distribute with the red current berries over the lettace leaves. Serve.
