Red Current, Yellow Tomato Salad With Lemon Thyme

  1. Slice into halves 1 pint yellow cherry tomatoes and put in a small bowl with 2 Tablespoons EVOO and 1 tsp sea salt to marinate with leaves of fresh lemon thyme. Combine 2 T honey with 2 T squeezed citrus juice, black seame seeds and pink peppercorns. Add to tomatoes and distribute with the red current berries over the lettace leaves. Serve.
