Spinich Chips

  1. Put thawed spinach in a tea towel and squeeze out excess moisture. Blend in a food processor with all of the above ingredients except the vegetable oil for frying. Blend until a ball of dough forms.
  2. Remove dough and knead until smooth (about 5 minutes).
  3. Place dough ball in a bowl and cover with a damp cloth and let stand for 30 minutes.
  4. Divide the ball into four pieces. Roll each piece out thin with a rolling pin or pasta machine.
  5. Sprinkle each thinly rolled dough with a bit of flour and let stand for 15 more minutes.
  6. Using a pastry cutting wheel cut the sheets into rectangles about 2 inches by 1 inch.
  7. Heat the oil until very hot (about 350 degrees F). Test a few of the dough rectangles to see how they cook. If you are satisfied, cook the rest in small batches for about 8 - 10 seconds (or until cooked on both sides).
  8. Remove from oil with a slotted spoon and drain on paper towels.
