Spinich Chips
- 1 pound of frozen spinach, thawed
- 1 2/3 cups of semolina flour
- 2 eggs
- 1 tsp vegetable oil
- 1 tbsp salt
- 1/2 cup freshly grated Parmesan Cheese
- 1 tsp freshly ground pepper
- 1 tsp dried oregano
- 1 tsp onion salt
- 1 tsp garlic salt
- vegetable oil for frying
- Put thawed spinach in a tea towel and squeeze out excess moisture. Blend in a food processor with all of the above ingredients except the vegetable oil for frying. Blend until a ball of dough forms.
- Remove dough and knead until smooth (about 5 minutes).
- Place dough ball in a bowl and cover with a damp cloth and let stand for 30 minutes.
- Divide the ball into four pieces. Roll each piece out thin with a rolling pin or pasta machine.
- Sprinkle each thinly rolled dough with a bit of flour and let stand for 15 more minutes.
- Using a pastry cutting wheel cut the sheets into rectangles about 2 inches by 1 inch.
- Heat the oil until very hot (about 350 degrees F). Test a few of the dough rectangles to see how they cook. If you are satisfied, cook the rest in small batches for about 8 - 10 seconds (or until cooked on both sides).
- Remove from oil with a slotted spoon and drain on paper towels.
