Gorgeous Apple Rice Pudding
- 2oz short grain pudding rice
- water to cover
- Pint milk
- Large tin evaporated milk
- good splash vanilla essence
- heaped teaspoon ground cinnamon
- 4 ozs sugar (or to taste)
- Pureed cooking apple - either baked (as suggested above, or cooked and pureed in a saucepan.
- Rinse the rice in a sieve,place in medium sized saucepan and use enough water just to cover the rice
- Cook the rice on a high heat until the water has been absorbed, stirring all the time
- Add all the ingredients except the sugar.
- Cook on high heat until just boiling, turn down to simmer and cook for about 15 minutes, or until the rice is soft, stirring frequently
- When the rice is soft, remove pan from heat and stir in the sugar and baked apple - taste and adjust sweetness if necessary
- Pour into serving dish nd serve either hot or cold- with fresh or tinned fruit on on its own
