Jimmie'S Leek Soup
- Needed for soup:
- 3 Large Leeks, chopped (white only)
- 1 Lb Bacon, fried crisp
- 2 Large Potatos, small chunks
- 2 14oz cans of Chicken Broth
- 2 tbles of chopped garlic
- 1 4oz tub of sour cream
- 1 Cup of milk
- 1 Small package of shredded cheese (your choice)
- Take a four quart slow cooker and put the chopped leeks, large potatos ,
- garlic, and chicken broth into it. Start cooking on high. Fry bacon crisp
- and put all contents into the crock pot. Slow cook for 6-8 hours, or until
- potatoes are soft. Use a potato masher and mash the chunks into small
- pieces. Add at least 4 oz of sour cream and one cup of milk and stir in
- completely. Serve in soup bowls with a sprinkling of cheese. Serve with
- garlic bread if possible.
