Vegetarian Casserole
- 3 large potatoes
- 1/2 c. yogurt
- 1/2 c. fresh chives, minced
- 1/2 c. fresh parsley, minced
- 1 1/2 Tbsp. butter
- 1 large onion
- 1 clove garlic, minced
- 4 large carrots, chopped
- 2 stalks sliced celery
- 1 lb. mushrooms
- 2 large zucchinis
- 1 green bell pepper
- 1/4 tsp. thyme
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 1 c. frozen peas
- 3/4 c. tomatoes
- 3/4 c. grated Cheddar cheese
- 1 Tbsp. cider vinegar
- 1/4 tsp. paprika
- 1/4 tsp. pepper
- 1 c. spinach (optional)
- 1 c. broccoli (optional)
- Cook potatoes in boiling water until soft.
- Drain and mash potatoes and mix with yogurt (or 1/4 cup milk), chives and parsley.
- Set aside.
